Introduction

Ingredients

Flour, Whole Wheat, Sprouted, Organic, 4 cup
Butter, salted, 4 tbsp softened
Red Star - Active Dry Yeast, 2.25 tsp
Salt, .5 tbsp
Water filtered, cold, 1 cup
Warm filtered water 105 to 110 degrees F, 0.33 cup
Directions
1. Dissolve yeast and sugar in warm water between 105 and 110 degrees. Let foam up for about 5 minutes.
2. Insert dough blade into food processor and add flour, butter and salt. Mix together for 30 seconds or so.
3. Add cold water to yeast mixture and slowly pour into dough with food processor running.
4. Run food processor until dough is smooth and elastic. Approx 1.5 to 2 minutes. You may need to use a rubber spatula to scrape flour from sides of food processor once or twice during mixing.
5. Place dough in a large, lightly floured zip lock bag. Seal and let rise in a warm location for 1 to 1.5 hours.
6. Place dough on lightly floured surface and punch down. Let sit for 5 to 10 minutes.
7. Spray a 9" x 5" bread pan with cooking spray. Shape dough into a loaf and place in a bread pan.
8. Cover pan with plastic wrap and let rise for about 45 - 60 minutes, until dough rises above the edges of the pan.
9. Preheat oven to 400 degrees.
10. Bake bread for about 45 minutes. Top should be brown and loaf should sound hollow when tapped.
11. Remove from oven and cool on a wire rack for about an hour.
