Ingredients

    Boneless, Skinless Chicken Breast
    Bell Peppers (I had yellow)
    Medium Onion
    Large Carrot
    1 Can Diced tomatoes
    .5 can coconut milk
    Curry powder, salt, pepper and hot sauce to taste.

Tips

Use whatever leftove veg you have - a great way to get rid of onesie/twosies!


Directions

In 1 Tsp Olive Oil, cook carrots for 5 min. Add chicken, diced, and brown slightly. Add onion and pepper, saute for 1 minute. Add tomatoes and coconut milk, mix well. Add curry powder, salt, pepper and hot sauce to taste.
