Ingredients

    Ingredients:

    Atlantic Salmon (fish), 8 oz (1/2lb)
    Parsley, dried, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Baked Potato (baked potatoes), .5lb
    Onions, raw, 2 medium (2-1/2" dia)
    Garlic, 1 clove minced
    Milk, nonfat, .5 cup
    Nutmeg, ground, .5 tsp
    *Progresso Bread Crumbs - Italian Style, 3TBS
    *Kraft Reduced Fat Parmesan Cheese (grated), 1 tbs
    ***recipe calls for olive oil to moisten bread crumbs; coast casserole dish & for baked potatoes - I use cooking spray or ICB its not butter (100calories of this) olive oil makes this a 700+ calorie dish!)** Note asterisks in recipe itself!!

Directions

-Boil Potatoes until soft.
-Preheat oven to 375
-While boiling prepare fish - grease dish
lay fish evenly into dish
sprinkle parsley and s & p
-chop onions and sautee in cooking spray (vs 2tbs olive oil*)
-Drain & mash potatoes add olive oil* and milk to get a spreadable consistency
- add onions; garlic; nutmeg to potatoes
- Spread potatoes over fish
- mix bread crumbs & parmesan cheese. Add 2tbs oilve oil* to moisten the crumbs and sprinkle over potatoes
- Bake for 20 minutes until grust is golden brown - cover with foil if it gets too brown
- Can sprinkle with parsley before serving as a garnish
