Ingredients

    2 cupsBroccoli, fresh,
    1 large Leek - bulb and leaf -
    2 cups Celery, raw,
    2 cups Sugar Snap Peas, Raw
    1 can navy beans, rinsed
    10 baby carrots raw,
    1 Yellow Bell pepper
    1 Red Onion
    2 cups Spinach
    1/2 poblano pepper
    1 tsp salt
    2 tsp Herbes de Provence

Tips

The vegetables can be adjusted to whatever you have on hand. If you add, to many red or orange vegetables, the color will become a less attractive brown rather than pale green.
For a more hearty meal for the non dieter, garnish with bacon pieces , green onion slices and shredded cheese.


Directions

Chop the vegetables to a uniform dice and place in a large soup pot. Cover with water. Simmer until vegetables are tender. Puree with an immersion or regular blender and serve.
