Ingredients

Muffins:
3 cups all purpose flour
3/4 cup sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground ginger
1/4 tsp ground nutmeg
1 1/2 cups plain, nonfat greek yogurt
2 eggs
1 tsp vanilla extract
8 tbsp (1 stick) unsalted butter, melted and cooled
2 medium pears, peeled and diced into 1/2" chunks
1/2 cup crystalized ginger, diced small
Glaze:
1 cup powdered sugar
2 tsp ground ginger
3 tbsp fresh lemon juice
Tips
i love juicing fresh sweet limes for the glaze. if you have them readily available they are a great alternative to lemons!
Directions
preheat oven to 375. line or grease muffin pan.
whisk together flour, sugar, baking powder, baking soda,, salt, ground ginger (1tsp), and ground nutmeg in a large bowl. set aside.
in medium bowl, whisk together eggs, yogurt, and vanilla.
fold wet ingredients into dry ingredients. then fold in melted butter. batter will be stiff. finally fold in fresh pear and crystalized ginger.
spoon into prepared muffin pan. bake until tops are golden and toothpick in center comes out clean. approx 30 minutes.
allow to cool for 10 minutes before glazing.
while cooling whisk together powdered sugar and ground ginger. then whisk in fresh lemon juice. glaze should be thick but drizzleable.
drizzle over muffins and allow to stand for 5 minutes before serving.
