Introduction

Suprisingly light and fluffy Oat Flour Pancakes can be topped with your favorite toppings.
It's summer berry season, so today I've taken advantage of the summer berries I have on hand in my kitchen.
Suprisingly light and fluffy Oat Flour Pancakes can be topped with your favorite toppings.
It's summer berry season, so today I've taken advantage of the summer berries I have on hand in my kitchen.

Number of Servings: 18

Ingredients

    INGREDIENTS
    2 c. oat flour (developed with Bob's Red Mill Oat Flour)
    3 tsp. baking powder (organic)
    1 TBS raw sugar
    1/2 tsp. sea salt

    2 eggs (organic)
    2 c. milk or water (organic)
    1/2 C Almond oil




    Optional ingredients for topping:
    Blackberries
    Blueberries
    Strawberries
    Figs
    Raisins
    Walnuts
    Almonds
    Cashews
    or your favorite.

Directions

Warm pan or griddle to medium with 1 teaspoon butter or oil.
Add dry ingredients together and mix thoroughly.
Next add milk and water; stir.
Add oil and 1 egg at a time.
Mix thoroughly.
Pour 1/2 cup mix at a time.
Sprinkle with topping of your choice.

Serving Size: 1 pancake
