Ingredients

    2 Sweet potatoes, peeled and sliced into disks
    1 Delicata Squash, halved, seeds removed and sliced into 1/2 rings
    Aunt Jemima Lite (Maple) Syrup
    Extra Virgin Olive Oil
    Cinnamon

Directions

Mix the maple syrup and oil together with the cinnamon.
Toss the rings/disks with the maple syrup mixture and lay flat on a greased sheet pan. Season them with salt and pepper.
Place in the oven and roast for 35-45 minutes. Turn them over once halfway through so that they are golden on both sides.
Remove from the oven and serve.
