Ingredients

1 t cumin seeds, 1 t mustard seeds (optional)
1 onion, chopped
1 T ginger garlic paste
2 cups chopped fresh tomatoes
1 T butter or oil
Garam masala 1T or to taste
150 g spinach (about a pound)
1.5 cup frozen peas
1 block paneer (375 g)
1 cup vegetable broth
Tips
Can be served with rice or naan and is nice with a dollop of homemade yogourt. I usually add hot sauce since this is not a very spicy dish.
Directions
In butter, fry cumin and mustard seeds
Add onion and saute till soft
Add tomatoes, ginger garlic paste and cook till it resembles a thick paste (5-7 min)
Add garam masala and cook a minute more
Add spinach and vegetable broth, cook till wilted
Puree using immersion blender (optional)
Add cheese, peas and season to taste
Cook on low for 5-10 minutes to allow flavours to blend
Serving Size: Makes 6 generous servings
