Introduction

Low fat alternative to regular potato salad. Low fat alternative to regular potato salad.
Number of Servings: 8

Ingredients

    1 3/4 lbs red potatoes, boiled in skins
    6 hard boiled eggs
    2/3 cup Scallions, chopped
    2/3 cup celery chopped
    1/2 cup dill pickle, chopped
    3/4 cup fat free miracle whip salad dressing
    3/4 cup fat free sour cream
    1 tsp Mrs. Dash or to taste
    1 tsp dried dill

Directions

Dice cooked potatoes in approx 1 1/2 inch cubes (I leave the skin on), chop hard boiled eggs and add to potatoes along with the scallions, celery and pickles.

Mix the miracle whip with the sour cream in a small bowl and add the dried dill and Mrs. Dash.

Pour over the potato, egg and vegetable mixture and mix well but be careful not to break up the potatoes. Chill to let the flavors meld. (I make it the night or day before I'm serving it so it's nice and chilled and flavors are blended.)

Makes 8 servings - one cup each. 178 calories per serving.

Note: If you want to keep the cholesterol down, discard the egg yolks before chopping and only use the egg whites.

    This is an amazingly wonderful potato salad recipe!!! I used to eat potato salad a lot, its wonderful to know there is a healthier version of it that tastes SO GOOD!! My tastebuds say BRAVO!!!! - 6/10/10

    Very Good
    Made this for 4th of July dinner last night. It was fantastic. I didn't follow it exactly. The changes I made were this: I used nonfat plain yogurt instead of sour cream, 2 tsp. each of the Mrs. Dash and the dill. Definitely a keeper, thank you. - 7/5/09

    Thank you for telling us the serving size. Saying one serving has 160 calories doesn't help if I think a cup and a half is a serving. :-) - 3/27/08
