Introduction

This is my way to make a low calorie, high protein breakfast. This is my way to make a low calorie, high protein breakfast.
Number of Servings: 8

Ingredients

    1 Onion
    3 Bell Peppers (red, yellow, green)
    Olive Oil
    4c Simply Potatoes Hash Browns
    2lbs Chicken Breast-cooked and shredded
    1 can green enchilada sauce
    1c 2% cheddar cheese
    8 eggs

Directions

Saute the onions and peppers in 1t olive oil until onions are translucent. Remove from pan, add 1t olive oil and brown simple potatoes and brown. Layer the potatoes, onions and peppers, chicken. Then poor the enchilada sauce over top and crack the eggs in 8 little nests. Then top each egg with a sprinkle of cheese and back at 350 until warmed through and eggs are set.
