Ingredients

1 Ham Hock (approximately 1/2 lb)
2 cups dried Split Peas
1 medium Onions
2 Carrots
2 stalks Celery
Garlic, 4 clove
1 tbsp. kosher salt
1 tsp Pepper, black
2 Bay leaves dried
Basil, 1 tsp
Coconut Oil, 1 tbsp
water, 6 cups
Directions
soak split peas at least 4 hours
Chop vegetables and set aside
Place ham hock in heavy bottomed pot, cover with water and bring to boil. Continue to simmer on medium for about an hour until meat starts to fall away from bone. Remove from water and let cool. Skim off fat from top of broth. Put broth in crock-pot.
Use empty pot to sauté chopped vegetables in coconut oil until tender. Season with salt and pepper
Add cooked veggies to crock pot along with drained split peas and cook on high heat for 15 minutes.
Reduce heat to medium and cook for 3 hours.
Blend soup mixture using submersion blender until smooth.
Shred or dice meat from ham hock.
Add meat to soup and cook for another hour.
