Ingredients

4 cups low sodium chicken broth plus 2 cups water
12 boneless, skinless chicken thighs (approx 3 lb)
1 cup carrots, diced
1 cup celery, diced
1 cup onion, diced
1.5 tsp poultry seasoning
2 cloves garlic, minced
2 tsp salt
0.5 tsp black pepper
Directions
Place all ingredients except noodles in slow cooker and cook on high for 4-5 hours or low for 8 hours. Remove chicken. Skim off any fat from top of soup. Place uncooked noodles in soup and cook on high for 20 minutes. While noodles are cooking, shred chicken. return chicken to soup and serve hot. Add 2 additional cups water, if needed, to add volume to the broth.
