Introduction

I didn't make the buffalo sauce that the original recipe had with these. I used a medium cookie scoop to make the balls, so the serving size may vary depending on how you prepare them. Ingredients

    1.5 cups chickpeas
    1.5 cups cauliflower
    2 cloves garlic
    1.5 tsp olive oil
    1/2 tsp Greek salt-free seasoning blend
    2 tbs bread crumbs

Directions

Heat oven to 400. Prepare cookie sheet.
Put cauliflower in food processor and whirl until it looks like rice. Set aside in a large bowl.
Add chickpeas to food processor and blend until it's broken down and a bit sticky.
Chop garlic (and onions, which I omitted) and add to cauliflower. Add seasoning, olive oil, and chickpeas to cauliflower and mix everything until you can form balls.
Evenly space the falafel on the cookie sheet and place in oven for 15 minutes.
Turn the falafel over so the other side gets brown. Bake for 10 minutes longer. Watch the oven so they don't burn.

Serving Size: Makes 20 falafel (using a medium cookie scoop)

    This is a good recipe, better with chickpeas cooked from dry. The original recipe calls for all-purpose seasoning blend (salt-free is best). Greek seasoning contains beef bouillon granules; using it makes the dish no longer vegetarian or vegan. - 11/13/15
