Ingredients

16 ounces of chicken breast boneless skinless
salt, pepper, 1/2 teaspoon allspice, 1 teaspoon cinnamon, 1/2 teaspoon thyme
3 low carb tortillas cut into strips or wedges and toasted
1/2 cup pico de gallo
I cup diced mango
1/4 cup cilantro finely chopped
1/4 cup red onion or green onion finely diced
Juice and zest of 1 lime
salt and pepper to taste
Optional 1/2 cup low fat shredded jack cheese.
Directions
Preheat oven to 350.
Season chicken breasts with seasonings and grill or bake until cooked through. On the Forman grill it took about 15 minutes with the chicken breast sliced in half to make thin breasts. While they are cooking combine cilantro, lime juice and zest, mango, onion and salt and pepper. Let sit ( you can make this the day before for a better taste.) When chicken is done shred or chop chicken and mix it with pico de gallo ( you can make yoru own just combine 3 tomatoes chopped, 1/2 jalapino no seeds, 1/4 cilantro. a dash of lime juice, 4 finely chopped green onions and salt and pepper) spread chicken mixture over tortilla strips, sprinkle cheese over chicken mixture.
Bake 5-7 minutes to heat through.
Serve with mango mixture over the top.
