Ingredients

    2 Packets Instant Original Grits uncooked
    2 Eggs beaten
    1/4 C. Chopped green onions white and green parts
    1 C. Diced ham
    1 C. Shredded Swiss cheese
    Salt and Pepper to taste

Tips

Mix and match with different meats and cheeses, such as bacon and cheddar or make vegetarian using beans.


Directions

Preheat oven to 350 degrees. Boil 2 cups water, place the uncooked grits, chopped ham and onion in a bowl, add hot water, stir, mix in 2 beaten eggs and cheese, salt and pepper to taste, pour in greased 8X8 baking dish. Bake for 25 minutes or until eggs are set and casserole is slightly golden brown on top. Cut into 6 rectangle pieces.
