I make this every year for Imbloc (Candlemas, Groundhog Day) it's beautiful colour and spicy flavour help remind us that spring will be here soon. This version bumps up the veggies with no cream, butter, or rice. It is delicious and super healthy! Ingredients
1 large onion, chopped
2 stalks celery, sliced evenly
3 carrots, diced
1 1/2 Tbsp. curry powder
5 cups chicken stock
5.5 ounces Kale
1/4 cup diced tomatoes
10 oz. boneless skinless chicken breast, cooked and diced
1 granny smith apple peeled, cored & diced
fresh celery leaves
Directions
Chop onion, carrot, celery and onion. Remove tough stems from kale and chop. Dice chicken.
Add veggies, apple,chicken, spices and broth to large pot bring to boil over high. Reduce heat to med low and simmer for 50 minutes or until veggies are tender.
