    * Peppers, sweet, red, raw, sliced, 1.5 cup
    * Onions, raw, 1 cup, chopped
    * Garlic, 3 cloves
    * Corn Tortillas, 10 tortillas, small
    * Chicken Breast, no skin
    * Monterey Cheese, .5 cup, shredded
    * Lucerne Plain Fat Free Yogurt, 12 oz
    * Creamed Cottage Cheese, 4 oz


Chop veggies; boil meat. Shred meat and mix with veggies and cottage cheese. Fill corn tortillas and roll. When all enchiladas are rolled, cover fully with yogurt, sprinkle with cheese and bake.

    Definitely worth the 160 calories for each one. Had 3 and felt comfortably full. Round off with salad greens or bean and corn salad. - 5/2/08
