Ingredients

1/4 cup light miracle whip (or mayo if you prefer)
1/4 cup coarsely chopped basil
1 clove garlic
1 tsp grated lemon peel
4 tbsp lemon juice
2 tsp dijon mustard
1/2 tbsp extra light olive oil
3 medium artichokes
Directions
1. Cut artichokes in half lengthwise. Trim any sharp leaves and clean out the fuzz around the heart.
2. In a large heavy pot, place artichoke halves, 2 tbsp lemon juice and 3 to 4 inches of water. Bring to a roiling boil, cover and reduce to medium heat. Boil for 30 minutes.
3. In a food processor, pulse miracle whip, basil, garlic, lemon juice, 2 tbsp lemon juice, dijon mustard and olive oil until it is smooth. Place in fridge until artichokes are finished.
4. Remove artichokes after 30 minutes and grill for 2 to 4 minutes. If using a grill, spray artichoke halves with non stick spray; if using a griddle, spray the griddle.
Serve with sauce as a great side or double the portions to make a light dinner. The sauce is also great with fish.
