Introduction

Ingredients

2 Tbsp. coconut oil
2 carrots, sliced
1 yellow onion, diced
2 stalks celery, sliced
1 tsp. minced garlic, (about 2 cloves)
2 Yukon Gold or russet potatoes, peeled and diced
1/2 small head green cabbage, quartered and sliced (4 - 5 cups)
1 cup vegetable stock
28 oz. diced tomatoes, with their liquid + one 28 oz. can of water or broth
1/4 - 1/2 tsp. salt, to taste
2 Tbsp. apple cider vinegar
1/4 cup grated Parmesan cheese, for serving (optional)
Directions
Heat a large Dutch oven or stockpot over medium heat. When it is hot, add the oil, and when the oil is hot, add the carrots, onions, celery and garlic, and sauté them, stirring occasionally, for 5 minutes or until the onions are translucent. Add the potatoes, and continue cooking for 5 minutes.
Add the cabbage, stock, tomatoes and water, cover, bring the liquid to a boil, and simmer it for 30 minutes, stirring occasionally.
Add the salt and vinegar and continue cooking for 5 more minutes. Serve immediately, topped with the cheese, if desired
