Ingredients

    2 1/2 cups uncooked rice (I use brown rice)
    2 chicken breasts, cooked ad shredded
    10.5 oz can cream of chicken soup
    10.5 oz can cream of mushroom soup
    milk - 2 cans (fill empty soup can)
    2 cups steamed chopped broccoli
    8 oz bag shredded sharp cheddar cheese
    salt/pepper to taste

Tips

Rather than boil chicken I put the two chicken breasts in the crockpot to cook all day in one can of each soup plus some chicken broth. Cook on low all day and it makes chicken more tender and easier to shred.


Directions

Stir all ingredients together in a casserole dish. Cover with foil and bake at 350 for 25 minutes. Remove foil and bake for an additional 5-10 minutes until cheese melts.
