Introduction

This can be a side dish or a main dish. It's low fat and calorie and is really tasty!! I have even added a sprinkle of asiago cheese or parmesan on top. YUM!! This can be a side dish or a main dish. Ingredients

    3/4 cups medium barley
    1/2 cup brown rice
    1/2 cup wild rice
    6 cups veggie stock
    1 tbs olive oil
    6 cups mushrooms (chopped)
    1/2 cup chopped onion
    salt and pepper to taste
    1 Tbs. McCormack Roasted Garlic/Red Pepper seasoning
    1 Tbs. "Chicken" seasoning by Mrs. Dash

Tips

BE CAREFUL BRINGING IT TO THE OVEN!! IT CAN SPILL EASILY!!!!!!!!! You may want to "assemble it" with the oven door open and the pan on a pulled out oven rack. If you are worried, cut the recipe in half.


Directions

sauté the onion in olive oil until translucent. Add mushrooms and 1/4 cup stock. Cook until mushrooms begin to shrink. Mix rices and barley together with seasonings. Place in a 9x13 baking pan. Pour in remaining broth. When mushrooms and onions are partially cooked, place them on top of the rice (there will be a lot of broth) cover with tinfoil. Bake at 375 for 1 hr 15 minutes. Let stand for 10 minutes. Enjoy!!!
