Introduction

Ingredients

    2 tablespoons of balsamic vinegar (I used roast garlic)
    2 tablespoons red wine
    1 teasp Worcestershire Sauce GF
    3 tablespoons demura brown sugar
    4-3 oz pork tenderloin "coins" cut into 1" thick pieces
    4 pieces of Proscuitto

Tips

I had precooked a pork tenderloin to a medium rare state and retained a portion of loin for this dish.


Directions

Combine vinegar,wine,worcestershire and brown sugar together and set aside. Cut pork loin into 4- 1' thick coins (approx. 3 oz each). Fold each prosciutto piece in half the longway and wrap around each pork loin. Fasten with a couple of toothpicks. Put balsamic mixture in pan and heat until bubbling, so it begins to reduce. Add the Pork Loin coins and brown on both sides.
