Introduction

I came up with this one night as a side dish to go with my "healthy" fajita's! It's so easy and delicious! No Mayo!
I came up with this one night as a side dish to go with my "healthy" fajita's! It's so easy and delicious! No Mayo!

Ingredients

    1 package of Fresh Express Cole Slaw
    (Green Cabbage, Carrots & Red Cabbage Mix)

    3-4 Medium Sized Avocados

    1 Medium Sized Lemon & Zest

    Half of a Red Onion

    2-3 Roma Tomatoes

    Garlic Powder

    Salt & Pepper

Directions

In a large bowl toss the Cole Slaw Mix with salt, pepper and a good squeeze of half the fresh lemon. Add 1/2 tsp. of fresh lemon zest. Toss and combine well.
In another bowl; Mash up the avocados until creamy and sprinkle in salt and pepper lightly. Sprinkle in garlic powder to your taste. (I use about a tsp.) Add the diced tomatoes and red onions. Mix in well. Use the other half of the lemon and squeeze over mixture. Add in 1/2 tsp. lemon zest. Mix well.
Now, add 1/4 C. of Fat Free Sour Cream and stir until smooth.
Pour the Avocado Dressing over the Cole Slaw Mix and combine well. Taste Test to see if you need more salt, pepper or garlic powder. Chill for at least 30 minutes before serving.

Serving Size: Makes 8 1-Cup Servings

  • I shredded my own cabbage and carrot, and cut back on the avocado. I only used 2 avocados, a little avocado goes a long way. - 11/3/19

  • Delicious change up from the 'traditional' cole slaw! Didn't know what 'held it together' but found in the directions 1/4 cup sour cream (could substitute plain greek yogurt). - 7/23/19

    Awesome! =o) You're Welcome! I always feel great when I make it because of NO MAYO! Love it as side w/hamburgers (turkey burgers) because u get a "crunch" which keeps me away from chips! lol
