Introduction

Ingredients

    2oz boneless skinless chicken breast cut into 1 inch chunks
    1/2C instant rice
    1/2C water
    1/4C sweet red pepper
    1/4C yellow bell pepper
    1/4C chopped onion
    1T minced garlic
    1/8C chopped celery
    1/4C chopped fresh parsley
    1/2oz sundried tomatoes, julienne cut
    1/2C fresh mushrooms, chopped
    1/4C shredded carrots
    1t extra virgin olive oil
    1t butter
    1/2C chicken broth

Directions

Start 1/2C water in saucepan, then start chopping vegies. When water comes to a boil add rice, put lid on pan and turn off.

Heat butter and olive oil over medium high heat till butter melts then add mushrooms. After they've started turning brown and have absorbed the butter and olive oil add the rest of the ingredients and cook till chicken is done.

Makes 1 large, very filling, serving.
