Ingredients

    Pork Shoulder, 2lb trimmed of all fat and cubed
    2 Medium Yellow Onions
    2 T Olive Oil
    3 cups Chicken Broth
    4 medium Red potatos (skins on)
    1 1/2 cups Roasted green chili peppers
    Mexican Oregano, Cumin and salt to taste

Tips

Serve with a dollop of Sour cream for added richness


Directions

Slice onions 1/4" thick. Brown in 1 T Olive oil in large stock pot until browned and beginning to carmelize. Add Granulated garlic to taste. Meanwhile, trim pork of fat and cut into 1" cubes. Add pork to pot and cook until done (15 minutes). Add Chicken Stock and 9 cups water. Add Diced Green Chilis. Simmer for an 30 minutes or however long you want. 20-30 minutes before serving add diced (1/2") potatoes. Season with Mexican Oregano, Cumin and salt to taste.
