Introduction

Ingredients

1/2 c almond butter, all natural, no sugar added
1 egg
1/2 banana, very very ripe
1/2 medium apple, peeled & chopped into very small pieces
1/4 raw pecans (or other nut of choice) chopped small
1T cinnamon
1t ground ginger
1T fresh ginger, finely grated
1/4t salt
1/4t baking soda
Directions
Preheat oven to 325 F
Grease an 8x8 or 8 in round pan very well, I use coconut oil.
If you have a Vitamix- add everything EXCEPT apple pieces and pecans and blend on med low, you may need to scrape sides and re mix to get it all incorporated and smooth.
Or, with a Hand mixer, blend almond butter, egg, and banana until smooth, then add cinnamon, bs, salt and spices and mix until completely combined.
Fold in apple and pecans gently until coated, pour batter into pan and gently smooth out to fit pan. Drop pan onto countertop from a few inches in the air, a few times to remove air bubbles.
Bake for 12-15 min, or until toothpick comes out clean.
Let cool most of the way, then invert onto cooling rack and let sit upside down for a bit, slice and serve with a dollop of Greek yorgurt! Super yummy!
