Ingredients

    3 Cups Wheat Bran (bulk)
    2 Sticks Butter melted and cooled
    1 Bag of Semi-sweet or Dark Chocolate Chips melted and cooled
    10 Large Eggs (separated)
    3/4 Cups Dark Brown Sugar (added in two parts)
    2 Tbs Molasses
    1 Cup Buttermilk



Tips

I melt the butter earlier in the day and then let it cool on the counter.
If I am in a hurry, I melt the butter in a glass measuring cup and then put in the freezer and check every 5 minutes
I melt the chocolate in a metal mixing bowl over a sauce pan of hot water.
Before adding the egg white mixture to the batter, I taste the batter so see if I need to add any sweetness to my taste. If I do, I add more brown sugar to the egg whites before I fold them in.


Directions

Preheat Over to 350
Line the bottom of a 13/9 cake pan with wax paper and butter bottom and sides.

Melt the butter and let cool
Melt the Chocolate Chips and let cool

In a large mixing bowl cream the butter with 1/4 cup of the Brown Sugar, Add the egg yolks gradually,
Add the molasses,
Add the melted chocolate chips

In a medium bowl combing bran, salt, baking powder and baking soda.

Add the bran mixture in 3 parts alternating with the buttermilk

In a separate mixing bowl beat the egg whites and 1/2 cup dark brown sugar, making it as light as possible.

Fold the egg white mixture into the bran/chocolate mixture.

Pour into prepared pan and bake for 30-40 minutes. If you take out early and the middle of the pan is still a little gooey, they are still yummy.
