Ingredients

    1# GROUND TURKEY
    1/2 CUP CRUMBLED REDUCED-FAT FETA CHEESE
    1/2 CUP PANKO
    1 TBSP DRIED OREGANO
    2 TBSPS MINCED SHALLOT
    1 TBSP MINCED GARLIC
    1 1/2 TSPS KOSHER SALT, DIVIDED
    1/2 TSP GROUND BLACK PEPPER
    3 CUPS WATER
    1 CUP ORZO
    1/4 CUP DICED RED ONION

Directions

1. Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil.
2. In a large bowl, stir together turkey, feta, bread crumbs, oregano, shallot, garlic, 1/2 tsp salt, and pepper. Divide mixture into 12 portions, and shape each portion into a ball. Place on prepared pan.
3. Bake for 25 minutes or until a meat thermometer inserted in thickest portion of meatball registers 165 degrees.
4. Meanwhile in a medium saucepan, bring 3 cups of water to a boil over medium-high heat. Add orzo and remaining 1 tsp salt, and cook for 6 minutes or just until tender; drain. Transfer orzo to a medium bowl , and stir in olive oil and onions. Serve meatballs over orzo mixture.
