Introduction

Ingredients

    1 Tablespoon Coconut Oil
    1 cup chopped onion (I used Vidalia)
    6 - 8 cloves garlic, minced
    6 cups low sodium chicken broth
    5 cups asparagus, chopped
    1 cup celery, chopped (include stalks and leaves - celery leaves add the BEST flavor)
    salt, pepper, lemon juice to taste

Tips

You can substitute any vegetable in place of the asparagus. I use the base of this recipe for all my pureed soups. One of my favorites is broccoli and cauliflower.


Directions

Melt 1 TB coconut oil in large stock pot. Add chopped onion and minced garlic, cook until onion is soft. Add 4 cups of the chicken broth, along with celery and chopped asparagus. Let this simmer until asparagus is soft. Using a hand blender, blend soup, adding additional broth as needed. Add salt, pepper, and a splash of lemon juice.

Serving Size: Makes 6 - 1 cup servings
