Ingredients

    For Salad:
    1 cup quinoa, rinsed, cooked and cooled
    1 cup strawberries, quartered
    1 avocado, diced
    1/2 cup jicama, peeled & diced
    1/2 cup red bell pepper, diced
    2 scallions, thinly sliced
    2 TBLS fresh mint, chopped finely

    For Citrus Dressing:
    1/4 cup olive oil
    3 TBLS lime juice
    juice of 1 orange
    2 TSP dijion mustard
    dash-sea salt
    2 TSP agave nectar
    2 TBLS rice vinegar

    Combine in bowl and toss together. Drizzle dressing over top and stir to combine.
