Ingredients

    Cooking spray
    1 Tbsp chopped onion
    .25 cup fresh mushrooms
    1 whole egg
    .25 cup swiss or mozzarella cheese, finely grated
    Fiesta brand fajita seasoning, to taste

Directions

Spray small non-stick pan with cooking spray and sautee onions and mushrooms. Remove to plate. Add scrambled egg to pan and swirl around so egg covers pan bottom. When egg begins to set, place mushroom mixture on one half of egg and add Fiesta Fajita Seasoning. Sprinkle cheese over mushroom mixture and fold closed. Continue to cook until set, then remove to plate
