Number of Servings: 5

Ingredients

    1 box of penne pasta
    1 jar of sun-dried tomatoes (roughly 12)
    1 Tsbp olive oil
    1 bag (2 bunches) spinach
    1 clove of garlic, minced
    1/4 tsp red pepper flakes
    4 Tbsp Pine Nuts
    3/4 cup vegetable broth

Directions

1.) On medium heat, put the pine nuts in a pan and stir until pine nuts are brown and roasted
2.) In a large pot of boiling water, cook pasta
3.) Add olive oil, red pepper flakes, and garlic into a sauce pan on medium heat for about 1 minute or until garlic is golden.
4.) Tear up spinach and put into the saucepan, cook until nearly wilted.
5.) Add vegetable broth and sun-dried tomatoes to the saucepan - simmer for 5 minutes
6.) Toss the cooked pasta with the sauce and pine nuts

    This is so tasty! I was skeptical at first because there's not much to it. But the sun-dried tomatoes and toasted pine nuts really made this dish! I used whole wheat penne and it was a nice, almost sweet contrast to the sauce. - 6/16/08

    Incredible!
    I reduced the sundried tomatoes to 1/2 a jar and added some kalamata olives. Didn't have pine nuts, so didn't add those. - 2/1/12
