Ingredients

    1/3 cup almond flour or almond meal
    1/3 cup brown rice flour
    2 Tbsp natural unsweetened cocoa powder
    1 tsp cinnamon
    1/2 tsp baking soda
    pinch of sea salt
    8 ounces (267 grams) dark chocolate (70% cacao), chopped
    1/3 cup extra virgin olive oil
    2 eggs
    1/3 cup grade B maple syrup
    1/3 cup brown sugar, packed
    1 tsp vanilla extract

    Optional: nuts, your choice. (I don't add them)

Tips

Don't overcook.
If you like fudgier brownies, replace the rice flower with almond flour/meal.


Directions

Preheat oven to 350 degrees and oil a 9x9 pan.
In a bowl, stir the dry ingredients together (almond flour, rice four, cocoa powder, cinnamon, baking soda, salt).
In a small pan on low heat, melt half the chocolate pieces, stirring often. Remove from heat when smooth, and stir in olive oil. Then add vanilla.
In another bowl, whisk eggs until frothy. Slowly whisk in maple syrup and sugar until smooth. Add the chocolate mix, continuing to whisk. Then, add the dry ingredients. Last, add the remaining chocolate. Now is the time to add nuts if you like them.
Pour batter into prepared baking pan. Bake at 350 for 25 minutes, or until toothpick comes out clean. Cool to room temperature in the pan, and store in an air-tight container in the fridge.
