Introduction

Ingredients

1 Large Cauliflower
1 Cup Mozzarella Cheese (part skim)
2 Tbsp Grated Parmesan Cheese
2 Eggs (Large or Jumbo)
Spices to taste, be creative.
Directions
Preheat oven to 425 degrees.
Lightly grease baking sheet (I cover with foil first then spray) with cooking spray.
Rice (use processor or grate) one large head of cauliflower. Put riced cauliflower in microwave safe bowl (with damp paper towel laid on top) for 4 minutes. Let cool for a few minutes while preparing additional ingredients.
In separate bowl, add 2 eggs (scramble lightly). Add mozzarella cheese, parmesan cheese and any spices you like (salt, pepper, garlic powder, basil, oregano etc). Add this mixture to cauliflower and mix thoroughly.
Pour mixture in baking pan and shape to rectangle approximately 1/2 inch thick.
Cook for 40-45 minutes or until top is golden brown. Remove from oven and add additional mozzarella cheese and return to oven until just melted. Remove from oven and let cool slightly, use pizza cutter to cut breadstick length slices.
