Ingredients

    2 c brown rice, cooked
    1 can cream of potato soup
    1 c shredded cheddar cheese
    1 can tuna fish, packed in water
    1/4 c frozen peas
    1/4 c carrots, diced or shredded
    1/4 c broccoli, chopped
    1/4 c cauliflower, chopped

Directions

Cook rice as directed. In casserole, mix rice, soup, 1/2 c of cheese, tuna, and vegetables. Season if desired. Top with remaining cheese. Bake 45-60 minutes at 350.
Easy and yummy!

    Very Good
    I have made this recipe many times now. My husband and love it! I wondered if I would like the cauliflower mixed in or if it would taste too much like tuna, but it is a surprising and very nice combination with the potato soup and other veggies. It is easy to vary the ingredients, too. - 7/29/09
