Ingredients

    1.5 lb boneless skinless chicken thighs, cut into 2" cubes
    1 red bell pepper, sliced to 1" strips
    20 oz pineapple, cut into 1" cubes
    2 TBSP coconut aminos
    2 cloves garlic, minced
    thumbsize of fresh ginger, minced
    1/3 cup honey
    2 TBSP arrowroot powder

Tips

The arrowroot powder is supposed to be a thickener. May use another thickener instead.


Directions

Put all the ingredients in a slow cooker. Mix well. Cook on low for 4-5 hours.

Serving Size: makes 7 1.5 cup servings
