Ingredients
-
5 T Cornstarch
1/2 c Water
1.5 t Ground Ginger
3 T Brown Sugar
2/3 c Soy Sauce (reduced sodium is best)
3/4 t Garlic Powder
2 med yellow onions, cut into big chunks
5 - 6 c Broccoli pieces (I used frozen, 2 bags, 10 oz because it was all I had on hand)
1 1/2 lb Boneless Beef Round or Flank Steak
2 T Extra Virgin Olive Oil
Directions
Use a whisk to mix first 6 ingredients in a bowl large enough to place the steak. Cut the steak into strips, approx. 3/4" wide and 1/2" to 3/4" long (or to your preference). Place the steak into the marinade and place in fridge. I marinated only long enough to prepare my veggies.
Place approx. 1 T olive oil into skillet or wok. Stir fry the broccoli and onion on med high heat approx 6 minutes or until onion begins to turn translucent. Remove from pan and keep warm.
Add remaining olive oil to pan. Take your steak out of the marinade and squeeze the excess marinade back into your bowl. Stir fry the steak until it reaches desired doneness (I generally cook approx 3 minutes or so).
When steak is done, add the broccoli and onions back into your skillet. Then pour the entire remaining marinade over your vegetables and steak, stirring fairly consistently to coat well, and allow to cook until the sauce begins to thicken. This takes approx. 3 minutes or so.
Serve over rice if you wish.
