Ingredients

    1/2 cup apple sauce
    2 cups cornmeal
    1.5 cups whole-wheat flour
    2 tbsp monk fruit or splenda
    1 tbsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    4 large eggs, beaten
    3 cups nonfat milk

Tips

You can add 1 tbsp of vital wheat gluten to the dry ingredients if your cornbread seems not to rise.


Directions

Combine all dry ingredients in a large mixing bowl and stir well. Combine all wet ingredients in a medium mixing bowl and stir well. Add wet ingredients to dry ingredients and stir just until all is wet. Pour into sprayed 13X9 cooking pay. Bake at 425 for 20 minutes.
