    1/4 cup Extra Virgin Olive Oil
    1/2 teaspoon salt
    1/2 teaspoon dried basil leaves
    1/2 teaspoon dried thyme leaves
    1/2 teaspoon dried oregano leaves
    1/4 teaspoon black pepper
    1/4 teaspoon paprika
    4 medium potatoes
    1/4 cup grated Parmesan Cheese


You can use a light oil to reduce the calories. The cheese is optional. If you skip the cheese you still need to bake the potatoes for a total of 30 minutes.


Combine olive oil and seasoning in a bowl. Scrub unpeeled potatoes well. Cut each potato in half lengthwise, then in thirds. Add to bowl and coat each slice with the seasoned oil. Spread slices in a single layer on a greased baking sheet. Bake at 450 degrees for 15 minutes. Sprinkle with the cheese and bake 15 minutes longer.
