Ingredients

    1 large sweet potato
    2 cups black beans
    1 cup onions, chopped
    1 clove garlic, chopped
    1 tsp lime juice
    1 tsp coriander powder
    1 tbsp red chile powder
    1 tsp garlic powder
    1 tsp salt
    8 flour tortillas
    1 tbsp olive oil
    1 roma tomato

Directions

Peel and dice the sweet potato. In a large pan, add sweet potato with enough water to cover. Over medium heat, bring water to a simmer. Cover and let cook until sweet potato is fork-tender. Drain and set aside.

In the same pan, heat up 1 tbsp olive oil. Add onions and garlic and sautee until onions are clear and tender. Add the tomato and sweet potato, slightly mashing as you stir so there are some mashed and some intact pieces. Stir in black beans, spices, and lime juice. Place in tortilla shells and serve with toppings of your choice.
