This is not a low-calorie recipe. You could eat smaller portions, but good luck with that. I prefer to save my calories for this occasional treat. Dairy Free

Ingredients
-
3 TB Cashew Butter
2 C Almond Milk made into ice cubes
1/4 C Sugar
1 t Vanilla Exttract
1 T Instant Coffee (Instant espresso is best)
Directions
Combine all ingredients in the Vitamix. Start at 1 on low and quickly increase to 10.
Tamp the mixture down with the tamper.
Raise speed to high and continue to tamp. If you must add a tiny bit of additional almond milk at a time. But getting too much liquid will give you a smoothie, which isn't a terrible thing, but not what we are looking for here.
When you see the four lovely pillows on the top of the surface, you know it is ready to eat.
