Ingredients

    5 oz whole wheat spaghetti
    1/2 medium onion, minced
    1 red chilli pepper, minced
    2 tbsp chopped roasted red pepper
    1 3-oz can tuna, in water, drained
    1/2 lemon, juice and zest
    1 dill pickle, minced
    2 tablespoons Italian parsley, chopped

Directions

Cook the spaghetti in lightly salted boiling water for 8 minutes. Drain and keep warm.
Heat a non-stick frying pan and fry the onion, chilli and roasted pepper about 5 minutes in some non-stick cooking spray.
Add the tuna, lemon zest, lemon juice, pickle, parsley and cooked pasta.
Toss to mix thoroughly, and serve immediately.
