Introduction

I wanted to find a way to use the leftover pulp from juicing. First made this recipe with sugar, but tried it with honey and it cut the calories down a lot. This recipe is based on only carrots and apples being juiced. The bananas are the little apple bananas (manzano bananas), not regular bananas. These are moist, cake-like cookies. Ingredients

    Butter, salted, 1 stick, softened
    egg, 1 large
    Honey, 1/2 cup
    Flour,white, 1 cup
    Old Fashioned Quaker Oatmeal- Plain 1/2 cup dry
    cinnamon, 2 Tbsp
    Baking Soda, 1 tsp
    vanilla extract, 1 tsp
    Banana, fresh, 3 extra small, smashed
    Carrots, raw, 4 large, grated by juicer
    Apples, fresh with skin, 2 medium, grated by juicer
    Greek Yogurt, 2 Tbsp
    Pecans, 1/2 cup, chopped
    crystallized ginger, 3 Tbsp, minced
    Coconut, sweetened, 1/4 cup

Tips

Experiment with other fruits & veggies. I have made these with carrot, apple, watermelon, grapes and even a little bit of kale.


Directions

Run the oatmeal through food processor to make more like flour. Cream the butter and add the honey and egg. blend in the yogurt, and vanilla. Add the flour, oatmeal, baking soda, and cinnamon. Mix in the fruit pulp and the rest of the ingredients. Drop by spoonfuls on greased cookie sheet and smash down to make them as thin or thick as you like. They do not spread. Cook at 375 degrees for about 8 - 10 min.

Serving Size: Makes about 30 2 to 2 1/2" cookies
