    De-rib a head of kale (~6 cups raw)
    4 Tbs of EVOO
    Salt or seasoning to taste

De-rib a head of Kale
Spin dry with salad spinner - it must be VERY dry.
in ~4 batches, mix each batch with 1 Tbs of EVOO & add a dash of salt, if you'd like.
Place a portion of each batch on lined cookie sheet & bake for 9-12 minutes. Watch very carefully or they will burn and be bitter.
Remove from oven and season or salt immediately.
Repeat for remaining batches.
For a head of purple Kale, it usually takes 3-4 batches to cook the whole head.
