Introduction

Ingredients

    1 cup hazelnut flour (ground hazelnuts)
    1/2 cup coconut flour
    1/4 cup unsweet cacao powder, organic
    1/2 tsp baking soda
    1/3 cup maple syrup or 1/4 cup molassas or 1/4 cup honey
    1 egg
    2 TBSP coconut oil, melted

    filling:
    1 stevia sweetened chocolate bar (with or without nuts) or 2oz dark chocolate, chopped
    1/3 cup almond butter
    3 TBSP coconut oiil
    half 5.4 oz can coconut cream
    1/8 cup cacao powder
    5 drops vanilla liquid SweetLeaf organic stevia
    1/8 cup coconut milk or almond milk or raw milk

Tips

Serving size = 1 cookie

Directions

Preheat to 350, combine dry ingredients, add wet ingredients, hand mix, drop rounded tablespoons dough on parchment-lined baking sheet and make thumbprint, bake 10-12 minutes or until firm edges, cool completely on wire rack, make filling and fill center of each cookie with rounded tsp of chocolate filling, store in airtight container in fridge 3 days, freeze up to 3 months
