Yeast, bakers, 3.5 grams
*Celtic Sea Salt (Light Grey), Coarse Grain (The Grain & Salt Society), 1.5 tsp

*Extra Virgin Olive Oil, 2 tbsp
Directions
Mix first 4 ingredients with stand mixer and paddle. Mix on low for 1 minute, med low for another minute. let rest for 5 minutes, then mix on med low for 30 seconds.
pour a small amount of olive oil on counter top and spread to about 8 inches. remove dough from mixer and place on the oil slick. Cover with an inverted heavy bowl (oil the inside rim) for 20 minutes.
Uncover, stretch & fold the dough over on itself twice then cover for 20 minutes (s&F 3 times).
Divide dough and shape into loaves. Let raise until at least double in size.
Bake 500 degrees for 5 minute. Reduce heat to 450 about bake 10-15 minute. Rotate loaves (half turn) and continue to bake another 10-15. Cool on wire rack for an hour before cutting.
