Ingredients

    3 c Whole wheat flour
    1 1/4 granulated sugar
    6 tsp Ener-g Egg substitute or 4 eggs
    1/4 c canola oil
    2 c shredded zucchini
    1 c applesauce, unsweetened
    1/2 tsp baking powder
    1 tsp baking soda
    2 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp salt
    1 tsp vanilla

    optional (and included in nutritional info)
    2 tbsp chopped walnuts, sprinkled on top of the loaves.

Directions

This recipe yields 2 9'' loafs, 12 slices each or 24 medium muffins. The picture is 12 muffins and 1 9'' loaf pan.

Preheat oven to 350 degrees.

Mix flour, cinnamon, baking powder and soda, salt, nutmeg, and sugar. Mix the Ener-g egg substitute before hand in a bowl. Add that with the flour mixture along with sugar, zucchini, oil, vanilla, and applesauce. Mix until everything is moist and well blended.

Pour the batter into the pans and place in oven for 30-45 minutes. Check after 30 minutes. Muffins will bake faster than loaf pans will.

Makes about 24 servings.

    Delicious! Great use for my garden zucchini. Will freeze many bathches. I reduced cinnamon to 1.5 tsp, nutmeg to 1/4 tsp, and sugar to 1 cup. Plenty sweet even with that. Next time I'll cut the sugar back to 3/4 cup. - 7/22/09
