Ingredients

    1/2 c. coconut flour
    1/2 c. splenda or other sugar substitute
    1 T. cinnamon
    1/2 t. salt
    1 t. baking soda
    5 eggs
    1/4 c. coconut oil
    1 c. mashed bananas
    1/4 c. water
    1/2 c. chopped walnuts
    1/2 c. raisins



Tips

Make sure you use the paper muffin cups!! If not, they will stick no matter how much oil or grease you use.


Directions

1. mix dry ingredients in a small bowl.
2. mix wet ingredients in a larger bowl.
3. add dry ingredients to wet ingredients blending with a mixer, quickly so there are no lumps. Stir in walnuts and raisins. Batter will thicken.
4. measure equally into 12 muffin cups.
5. Bake for 20-25 mins at 325 degrees F.
