Ingredients


    Fiber One Cereal, original, 0.5 cup (1 serving) (remove)
    Mrs. Dash salt free seasoning blend, 1 tsp (remove)
    Egg substitute, liquid (Egg Beaters), .25 cup (remove)
    Tyson boneless, skinless chicken breast, 6 oz (remove)
    honey mustard dressing for dipping

Tips

Serve with a side salad of lettuce, cucumber, mushrooms and whatever else you like in your salad. I also like a breadstick.


Directions

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray. Cut the chicken into 6 strips. In a small blender or food processor, grind cereal into crumbs. Transfer to a pie or cake pan and mix in seasoning. Place egg substitute in another pie or cake pan. One at a time, dunk chicken in the egg, then dredge in the cereal mixture. Evenly lay on the baking sheet. Bake for 8 minutes, then flip and bake another 6 minutes.
