Ingredients

    1 ½ C Boiling Water
    1 C chopped dates (must have)
    1 tsp. baking soda
    1 C sugar
    ¾ C shortening
    2 eggs
    1 ½ C + 2 Tbsp Flour
    1 tsp. cinnamon
    ½ tsp salt
    1 tsp. vanilla

    Quantities may be varied to taste:
    ¾ C brown sugar
    ½ C chopped nuts (optional)
    1 C chocolate chips (at least ½ C)

Tips

Vary the nuts, chocolate chips, and brown sugar to taste. Make it light or rich depending on your mood.


Directions

Put dates into 1 ½ C boiling water and let cool, then add baking soda. Mix sugar, shortening, and eggs together well and then add date mixture. Mix again until just blended. Add flour, cinnamon, salt, and vanilla. Mix together and put into greased cake pan (9x13). Sprinkle brown sugar over batter—I create a thin layer. (I don’t measure, I look at it). Then sprinkle chocolate chips & nuts over top. Again, I don’t measure, I just spread it evenly over to create a scattered, consistent layer. You may add as much chocolate or as little as you chose.

Bake at 350 degrees for 40 minutes.
